Liquorice has traditionally been used by herbalists to soothe gastrointestinal problems such as stomach ulcers, leaky gut and heartburn. it is also taken to help with adrenal fatigue.
To make liquorice root infusion or tea use one to two teaspoonfuls of dried root to a cupful of water. Either make as a traditional tea or, to gain maximum strength, place the roots in a saucepan, pour on the water, cover with a lid and simmer gently for approximately ten minutes before straining.
Recipe suggestion: syrups, sauces and custards can be infused with the distinctive aniseed notes by adding the root, heating, and then removing before serving
